Mediterranean Quinoa Salad

About the Recipe


In a large bowl, combine quinoa, cherry tomatoes, cucumber, olives, and red onion.
Drizzle with olive oil and lemon juice dressing, and toss until well combined.
Season with salt and pepper, garnish with fresh parsley, and serve.



  • 1 cup cooked quinoa

  • Cherry tomatoes, halved

  • Cucumber, diced

  • Kalamata olives, sliced

  • Red onion, finely chopped

  • Fresh parsley, chopped

  • Olive oil and lemon juice dressing

  • Salt and pepper to taste
